If you must know the truth, hot chocolate is what I make when I don’t really want to make anything. It is one of the simplest things to whip up, yet it brings back a lot of great memories for me. It reminds me of when my brother and I used to fight over who got more mini marshmallows in their hot chocolate (parental conspiracy, I say.) It also reminds me of when I got to take a trip to Paris with my aunt and uncle a few years ago. Drinking a cup of hot chocolate in France was a completely different experience. It was like literally sipping on nothing but pure, melted chocolate. That’s all it was – hot chocolate.
This Hot Chocolate with Cinnamon Whipped Cream is worlds away from the pouch of microwaveable hot chocolate that I drank as a kid. It is as close as I can get to that delicious Parisian drinking chocolate. And it only has two ingredients – whole milk and bittersweet chocolate. I like to use a really good quality chocolate since it plays such an important role in this drink. I simmer a warm, milky chocolate mixture until it is thick and creamy. I top each mug with a generous spoonful of sweet, cinnamon-spiced whipped cream. It is the simplest and most delicious winter treat that I can think of.

Ingredients
- 2 cups whole milk
- 5 oz good bittersweet chocolate, chopped
- 1/4 teaspoon sea salt
- 1/2 cup heavy cream
- 1 tablespoon powdered sugar
- 1/2 teaspoon ground cinnamon, plus more for dusting
Directions
| 1. | Heat the milk in a small saucepan over medium heat, just until small bubbles begin to form around the edges of the pan. Add the chocolate and sea salt and whisk until the chocolate is melted. Continue whisking for 2 to 3 minutes, until slightly thickened. |
| 2. | Meanwhile, place the cream in the bowl of an electric mixer fitted with the whisk attachment. Beat on medium speed for about 3 minutes, until soft peaks form. Add the powdered sugar and cinnamon, increase the mixer speed to medium-high, and beat until stiff peaks form. |
| 3. | Ladle the hot chocolate into mugs and top each with a large spoonful of the whipped cream. Dust with more cinnamon and serve immediately. |

Absolutely divine!! I love the addition of sea salt!
