Herb-Roasted Potatoes

Potatoes are the quintessential side dish.  They are one of those things that, no matter how you decide to cook them, they pretty much take care of themselves.  And they always turn out delicious.  Baked, mashed, roasted, or fried, potatoes are an easy side dish that is sure to please everyone sitting around your dinner table.

My favorite way to enjoy potatoes is to roast them.  You can throw them in a hot oven and forget about them.  I love roasted potatoes because they crisp up on the outside, but stay soft in the center.  They just fall apart in your mouth because they are so tender.  This dish will satisfy any potato lover.

Herb-Roasted Potatoes

Yield 4

Ingredients

  • 1/2 teaspoon freshly ground black pepper
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 teaspoon kosher salt
  • 1/4 cup extra-virgin olive oil
  • 1 1/2lb baby new potatoes, halved
  • 1/2 teaspoon dried oregano

Directions

1. Preheat the oven to 400°F. Combine the potatoes, olive oil, salt, pepper, garlic, thyme, rosemary, and oregano in a large bowl and toss well.
2. Arrange the potatoes in an even layer on a large rimmed baking sheet. Roast for 30 to 40 minutes, until the potatoes are golden brown and tender. Serve warm.
I like to use dried herbs when roasting potatoes because they hold up really well in a hot oven.  I usually use herbs like rosemary, thyme, and oregano for these roasted potatoes, but use whatever you have on hand.  Chives, dill, or tarragon would be delicious.  Any hearty, substantial herb works perfectly. 
These have more flavor than baked potatoes, are easier than mashed potatoes, and are healthier than fried potatoes.  In my book, they are simply perfect.

My mom always made the best herb-roasted potato chunks and I’ve never been able to recreate them! Yours look just as good as hers. Can’t wait to try these!

Wow, these look perfect! I love potatoes, of any form. They are my weakness. I just got all 4 wisdom teeth removed, and I can only eat soft food. Mashed potatoes it is :)
